Stuffed Cream Cheese Chicken
A deliciously indulgent and satisfying dish—perfectly seasoned chicken breasts filled with a creamy spinach mix, wrapped in crispy bacon, and baked to perfection.
Ingredients (Serves 4)
4 boneless chicken breasts
226g (8 oz) cream cheese, softened
½ cup cooked spinach, wilted and thoroughly squeezed dry
2 slices streaky bacon per chicken breast (8 slices total)
½ tsp mixed herbs
¼ tsp sea salt (or Himalayan salt)
Freshly ground black pepper, to taste
1 tsp garlic powder (or 1 clove fresh garlic, crushed)
1 tsp onion powder
1 tbsp dried parsley
BBQ spice or smoked paprika, for seasoning
Instructions:
Preheat your oven to 200°C (390°F).
Butterfly the chicken breasts by carefully slicing them horizontally—be sure not to cut all the way through. Open them up like a book.
Season the inside and outside of each breast with salt, pepper, and either BBQ spice or smoked paprika.
Prepare the filling: In a bowl, mix together the softened cream cheese, spinach (squeeze out all excess liquid!), garlic powder, onion powder, mixed herbs, and parsley.
Stuff each chicken breast with an equal portion of the cream cheese mixture. Fold them closed.
Wrap with bacon: Lay two bacon slices per breast underneath, place the stuffed chicken on top, and wrap the bacon around to seal it. Secure with toothpicks or kebab sticks if needed.
Bake in the preheated oven for 25–30 minutes, depending on the thickness of the chicken. Use a meat thermometer to ensure the internal temp reaches at least 75°C (165°F).
Finish under the grill for 5 minutes to crisp up the bacon beautifully.
Serve hot with a fresh salad or steamed vegetables.

Tips & Variations
Swap the spinach for broccoli, jalapeños, or sundried tomatoes.
Add shredded cheese to the filling for extra gooeyness.
Want a spicy kick? A touch of chilli flakes in the filling works wonders.
